Motivational Mondays- A traveling families food tips


Good morning readers and happy Monday!!! We had a wonderful weekend & have a very busy week ahead. I wanted to share with you guys some of this weeks meals that I have prepared to keep us on our fitness & health track as we are on the move! We love these for adults AND our little guy! (who turned 7 months old yesterday).


On a side note....
My husband and I have a little bet going on for weight loss. We are in a tight competition so our diet is more important than ever! :) winner gets a pretty great prize!!


Breakfast Muffins (adults)
1 cup chopped cooked turkey bacon
1 cup spinach
1/2 cup cheese
2 cups egg whites
1/2 cup fresh pico de gallo
pepper & salt to taste
(can add 1/2 an avocado)
bake on 350'F for 20-25 minutes


Fruit snack muffins (adults)
1 cup of whole wheat flour
1 cup quick oats
1 cup strawberries
1 banana
1 cup blueberries
2 tsp baking soda
Blend all together, bake on 350'F for 15-20 minutes


Healthy chocolate muffins (adult) 
2 ripe bananas
3 tablespoons pure cocoa
1/4 cup dark chocolate chips
1 cup natural peanut butter 
Blend well, bake on 350'F for 12-15 minutes


Broccoli & Cauliflower bites (adults)
1 cup of broccoli
1 cup of cauliflower
1/2 cup cooked quinoa
1 egg
1/4 cup cheese
salt & pepper to taste
-cook the broccoli & cauliflower until soft
-mix all ingredients
-bake on 350'F for 15 minutes

Fruit snack muffins (baby)
1 cup whole wheat flour
1 cup baby cereal
1 tsp. baking soda
1 mashed banana
1 cup strawberries/blueberries
BLEND WELL
bake on 350'F for 15-17 minutes
((I like to mix up the fruits for different flavors, i usually use 2 fruits))


Logan is also LOVING smoothies. I make them in his Tommee Tippee transition cup that holds 9oz. It has a very wide & fast flowing nipple so he can enjoy easily.....and mess free!!
Here is what I usually make him.

Baby smoothie
1 banana
1/2 cup strawberries
1/2 cup blueberries
1/2 cup stonyfields baby yogurt
1/2 ounce water
1/2 ounce pure apple juice
BLEND WELL & SERVE

  1. Morgan! How timely. Yesterday I was on Pinterest looking up healthy breakfast and snack muffins. It is always best when you personally know someone that has made the same or similar to co-sign.

    I am going to try these tomorrow to pack on our trip to avoid airport snacking - candy bars, chips, etc.
