I love this dish! {and many people have asked me about meals I make overseas}. It's not always easy to find good or exact ingredients in Europe as I do in America. But this casserole is one of my favorites to make! It's super easy, not extremely unhealthy {we like the bad sometimes :)}, and it's packed with flavor! The ingredients are available anywhere you are I'm sure! You can add meat as well, we made ours with chicken.
Ingredients:
1 pound chicken breasts, cooked & shredded (or chopped).
1 can of cream of chicken soup {this is the traditional ingredient but I like to use 2% milk (1cup), light butter (3 tablespoons), and 1 teaspoon of Mrs. Dash garlic & herb seasoning, instead}
2 cups shredded cheddar cheese (we prefer light Swiss and that's what I used in ours)
2 cups of broccoli, chopped
1 bag (or 3 cups) of white rice {brown is what we usually use, but in this dish white rice cooks & tastes better to us}.
salt & pepper to taste
Directions:
Cook chicken & shred or chop.
Chop the broccoli while chicken is cooking, as well as boil the rice.
When all is done it's time to mix & bake!
Preheat oven to 375 degrees.
Mix all the ingredients in a bowl except use only 1/2 the portion of cheese. Once combined {rice, meat, broccoli, soup (or sauce), and cheese} pour into casserole dish.
Bake for 15-20 minutes. This is really for heating, melting & cooking the broccoli--your rice & meat are already cooked.
Remove from oven & top with the remainder of cheese. Turn off oven & place the dish back in the oven to melt cheese for (3-5 minutes).
Remove and serve hot.
